Banana Bhud

I have a MAJOR sweet tooth. I take them in any shape or form; cakes, puddings, pies, ice cream, chocolate, vanilla...you name it, I like it. So when I realized that I wasn't going to have dessert for a week, I started to panic. Luckily, I wasn't the only one that was in dire need of some sweet satisfaction. One night, me and my partner in crime, Erin, discovered something amazing. Bananas, honey, and cinnamon. Healthy, simple, and satisfying! I have to say, after a few Banana Bhuds, the whole retreat started eating them!

If you're feeling extra sinful, substitute the cinnamon with some cocoa powder. :)

Spinach Salad with Tomatoes and Quinoa




One of my best experiences during my six month journey was my yoga retreat in Pai, Thailand. The food was absolutely amazing and I didn't miss meat once. In an effort to reverse the damage I've done to my body in the past six months, I've been inspired to make healthy food taste good.

Spinach Salad with Tomatoes and Quinoa

1 1/2-2 cups of baby spinach (washed and dried)
10 cherry or grape tomatoes
3 cloves of garlic
1/4 cup of cooked quinoa (preferably red quinoa)

Makes 2 servings

1. Heat olive oil in a large skillet and saute garlic for 2 minutes.
2. Add spinach and saute for about 1 minute. (I don't like my spinach overcooked)
3. Add tomatoes. (If you prefer your tomatoes cooked thoroughly, than reverse the last two steps)
4. Finally, toss in the cooked quinoa and add salt and pepper for taste.

*For added protein to the dish, feel free to add chia seeds.

6 Month Travel Diary


I won't lie and say that I wasn't intimidated about taking a six month journey around the world for the most part, all on my own. It was a trip that started with some pessimism and a lot of hesitation, but that all changed when I arrived at my first destination. Solo traveling has become something of the past. I was impressed to find so many female solo travelers along my route. It has truly inspired me to go places I never thought possible.

Travel Apps


For starters, I've MAXED OUT the memory on my phone. So out of necessity I had to find essential travel apps that were truly worth it to land a spot on my phone. The Convert app will convert currency, temperature, weight, and just about anything else you can possibly think of while traveling. Flight + is a paid app ($1.99) that allows you to organize your itineraries. The app includes a map, real time updates of flight times, gate/terminal info, and seat maps. The app is also compatible with TripIt. 'Trip Wallet' is an expense tracker. MapsWithMe is a free app that works without Wifi, as long as you download the map in advance (Wifi). And of course, Kayak, it's essential to track the price of your flight prior to buying.
